Cornell Cooperative Extension of Yates County is offering a beginner pressure canning class on Friday, October 3, 2014 at 4:30 PM. This will be a very basic introduction to the principles of pressure canning, including hands-on preparation and processing. A vegetable available at that time will be canned, and participants will be able to return to the office and pick up the cooled and sealed jars the following week.
With increased interest in both “buying local” and home canning, it is important to know the current recommendations, processing times and procedures. Pressure canning is required of non-acid foods, including most vegetables and meats. The class will cover how to determine which method of processing is appropriate for which foods, equipment needed, and the steps involved in pressure canning. Cost is $10.00 per person or couple, and participants are required to sign an acknowledgement of risk waiver form before the class.
